Sushi pop-up bar at Engelwirt

We love good sushi.
And the best sushi? That's in Japan, of course.
But since the Engelwirt can't easily travel to Japan, we simply bring Japan to us.

Bernhard Lang, a passionate sushi chef from Regensburg, now travels to Japan almost regularly to learn the latest trends in the art of sushi and perfect his skills. There, he worked shoulder to shoulder with his teacher and friend Ryutaro San. Ryutaro San lives in Tokyo and is currently head chef at the renowned sushi restaurant Sushidokoro Isseki Sancho in Shimbashi. After completing his training, he refined his craft at the legendary Hakkoku under the guidance of Hiro Sato, a Michelin-starred sushi master.

A few months ago, Bernhard infected us with an idea: to bring a sushi chef from Tokyo to Berching – and open a sushi pop-up bar at the Engelwirt. 

A wild idea, but one that we couldn't get out of our heads! 

No risk, no fun!
On May 7, 8, 9, and 10, Bernhard Lang and Ryutaro San will serve an exclusive Yōroppa-style omakase for only 10 guests each night.

You can expect a classic omakase menu – omakase (お任せ) means “I leave it to you” – interpreted in a European context and carried by uncompromising Japanese precision. In 22 courses, including 16 nigiri and 6 other seasonal Japanese compositions, a menu unfolds that focuses entirely on product, technique, and timing. Prepared right before your eyes and served at the bar – close, pure, and intense. The experience is accompanied by water, green tea, beer, and sake. Absolute freshness and the highest quality are the focus, without frills or fuss. Instead: pure passion for Japanese cuisine and classic techniques that are otherwise only experienced in Japan. Minimalist. Clear. Consistent.
